Red Sage, the fine dining new American steakhouse at Hilton Santa Fe Buffalo Thunder Resort & Casino, has unveiled a new menu of colorful, New Mexican-inspired small plates, seasonal dishes and traditional favorites with a modern twist under direction of acclaimed Chef, Thomas Hartwell.
Red Sage features prime, hand-selected steaks and fresh seafood using innovative Southwest flavors in an intimate, fine-dining atmosphere. Fare rotates seasonally and is enhanced by the diverse wine selection of domestic and European varieties. This collection includes numerous local producers and wine makers with familiar labels and approachable pricing.
An evening at Red Sage is made memorable with thoughtful cuisine and a dramatic ambiance featuring a wall-length fireplace, dramatic artwork, expansive glass-enclosed wine cellar and outdoor fire pits overlooking the turquoise pool waters and Sangre de Cristo Mountains.. Recently receiving The Wine Spectator’s 2016 Award of Excellence, the restaurant’s extensive wine collection is under direction of Certified Level II Sommelier Laurie Catazone, who also serves at the restaurant manager.
Red Sage is located on the lobby level and both the bar and restaurant open onto a large patio for outdoor seating in the Summer. Red Sage also offers a private dining experience for any need. We welcome you with warm hospitality and personalized service, only 15 minutes north of the Plaza.
