If you haven't tasted an authentic, high-quality balsamic vinegar (made in Modena, Italy using traditional methods and aged for years), here is your opportunity. Mangiamo Pronto! owners Fritz and Kathy Holland visited an "acetaia" (vinegar-making house) in Italy and were so impressed they brought some back to share. Kathy will explain how balsamic vinegars are made and why they are so unique. You will taste four different vinegars – two aged for at least 12 years and two aged 25 years or more (in various wood barrels). The tasting includes a sampling of appetizers and Parmigiano Reggiano (the other "real deal"), and a glass of Lambrusco or Trebbiano wine, which is made from the same grape used in balsamic vinegar.

TRADITIONAL BALSAMIC VINEGAR OF MODENA P.D.O. (Protected Designation of Origin)
Protected Geographical Status (PGS) is a legal framework defined in European Union law to protect the names of regional foods. Protected Designation of Origin (PDO) is a distinct regime of geographical indications within the framework. The law ensures that only products genuinely originating in that region are allowed in commerce identified as such. The legislation came into force in 1992. The purpose of the law is to protect the reputation of the regional foods, promote rural and agricultural activity, help producers obtain a premium price for their authentic products, and eliminate the unfair competition and misleading of consumers by non-genuine products, which may be of inferior quality or of different flavor.
